Fun fact, paleontologists adopted the word "thagomizer" to be the word used to describe the stegosaurus tail. I love the dinosaur hunt idea and would love to learn more about the rules you used. It seems to me like the best way to run the game is to tell the players they are hunting a dinosaur but not tell them what kind. Maybe even roll randomly for the type when they first spot it then give them the option to go for it or try their luck with another one later.
Yup! The origin of the word 'thagomizer' is a favourite of mine. Good old Thag Simmons (and Gary Larsen, of course).
The game I play is Palaeo Diet: Eat Or Be Eaten from Ganesha Games. It's really designed as a solo game (or a so-operative one) with the players hunting beasts and the beasts being controlled by a series of reaction tables. So you need to know what you're up against so you know what table to use :)
I do run games where there's a choice of targets on the table, and you can change teh hunt halfway through if things go badly. Of course the beasts your'e not hunting might still get involved if the hunters are unlucky in their reaction rolls (or are simply careless).
